Cauliflower-Kale Soup


A tasty way to get your greens! This  creamy, satisfying soup is a client AND family favorite and only takes about 20 minutes to prepare!

Cauliflower- Kale Soup

(4 generous servings)


2 tablespoons olive oil
2 yellow onions, diced
2 cloves garlic, minced
6 cups vegetable broth
4 cups cauliflower florets, fresh or frozen
4 cups kale, shredded, fresh or frozen
½ teaspoon crushed red pepper (optional)


Saute onion in oil over medium-high heat. Add garlic and cook 1 minute more. Add cauliflower and broth, just to cover–and cook until soft, about 10 minutes. Add kale, turn off heat and cover pot until wilted– about 4 minutes. Puree mixture until smooth. Garnish with crushed red pepper if desired. You may wish to add more or less broth depending on how thick or thin you like your soup. Remember, you can always add, but you can’t take it away 😉
