What I Ate Wednesday (Vegan)

Wednesday usually hits hard at work. As the tension increases, I seek immediate relief in my food choices. Dopamine now! I kept it together, though–for the most part. Thursday is another story…

A basic, but colorful fruit salad with a slice of whole wheat peanut butter toast.

Afternoon Snack

One vegan product I rave about is Violife Epic Mature Cheddar. I don’t like all their products, but this one nails it. The best, most realistic facsimile of real sharp cheddar cheese. Makes delicious pimento cheese spread…but we’ll get to that later.

Avocado toast with pumpernickel, tomatoes and miso.

I ended up working late. After a cold beer and a dip in the hot tub, dinner was pretty light after all the stress eating/snacking that went on during the day.

I am really glad we set ourselves up with a few healthy foods to grab and go as the week gets busier for both of us.
